Oatmeal: Culinary Blank Canvas

Oatmeal serves as the perfect base in which to bring out your inner artist – don’t you think? Recently, I’ve been inspired by the array of sweet and savory combinations of dishes that can be created with so humble and simple of a grain: the oat. Oatmeal is not only nutritious and satisfying, but also a beautiful culinary work of art and an affordable meal year-round. Color, texture and taste can be delicately crafted in endless variations – think miso, sliced radishes, cilantro, a poached farm egg and toasted seeds for a savory explosion. Or a nourishing sweet version like the one our founder, Hayley, brought for the team one morning, filled with playful toppings and infusions like nut butter, cacao powder, currants, and persimmon.

Love is in the air! We’re soon approaching Valentines Day, which in this country typically brings to mind the gifting of red roses, chocolate (in any form!) and romantic cards. Here at ecopiggy, we take this holiday less seriously as we believe that love should be sprinkled throughout the year, in unexpected ways! We enjoy surprising each other with nourishing treats, homemade body products, candles, crafts and lots of gratitude! It’s all about the act of giving freely and lighting up others’ lives.

Meal Prep :: Healthy Food. Healthy Family

I love love love opening my refrigerator, and having healthy options ready for snacks and quick meals.

This week a girlfriend got me motivated to make some plans for a shared prep prior to the kids and I leaving for New York.   Less than 24 hours after returning home from the east coast, our fridge had the above goodness, plus more!  Generally we make a plan for what we will prep, and then divide the list between two to three households.  There are usually a few last minute changes, like this week I over roasted the cauliflower, so it became a delicious Thai Curry Cauliflower Soup.
